Noodle-making process

My favorite part of the trip is learning how to make noodles and even trying to do it. I didn’t expect to make the noodles that easy!

Here is how to make traditional noodles:

  • Use rice husks to heat the furnace.
  • Mix the rice flour and coat a thin layer. After about 20 seconds, take it out.
  • Spread the layer on the wooden rack and let it dry for a while
  • Cut it using the cutter

Another exciting part is the colorful noodles. They are naturally colored from a variety of fruits and vegetables: the red color of Gac fruit (Momordica cochinchinensis), the green color of the pineapple leaves, the white color of the rice flour.

Hu Tieu pizza

This Can Tho noodle factory is also famous for its Hu Tieu pizza, so don’t forget to try it.

What is Hu Tieu pizza?

Rice noodles are called Hu Tieu in Vietnamese.

Unlike the traditional pizza with flour-based dough, the base of this dish is made from noodles. The chef fries the noodles quickly in a hot oil pan until golden, then takes them out. Fried noodles are round as the base of a regular pizza.

The toppings on this dish are also interesting. Not using beef, ketchup, or cheese, the chef uses different toppings, including salted shredded pork, eggs, onions, garlic, and peanuts.

This combination creates a unique and crunchy dish. And it’s very yummy too!

You can get several souvenirs from this factory as well. They have various items, from coconut candies to rice noodles products. I recommend drying some dried fish and coconut vodka (for free)!
